This first course aims to deepen the technique of developing recipes, based on the rule of balance of the main ingredients used in the production of ice cream.
Ideal for all who wish to understand the composition of dairy based syrups, as well as develop unique recipes with different textures and appeals. In addition to the theoretical content we analyze sensorially several ice creams and develop together new recipes.

Course of improvement. Intended for anyone who already works in the area of ice cream. We recommend bringing a calculator. This course does not include ice cream production.
